By day the Vert Mer menu offers Mediterranean classic cuisine with a modern twist from acclaimed Spanish chef Juan Martin, but as the sun sets, it is transformed into a French fine dining experience, with a menu designed by 3 Michelin star chef Emmanuel Renaut.
